Ingredients

  • baguette, sliced 1/2 inch thick
  • tablespoons olive oil
  • ounces feta cheese, crumbled
  • ounces cream cheese, softened
  • tablespoon honey
  • 1/2 cup mixed summer berries (strawberries, blueberries)
  • tablespoons balsamic glaze
  • Pinch of freshly ground black pepper

Prep Steps

  1. 1Preheat oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange on a baking sheet. Toast for 8 minutes
  2. 2minutes until golden and crisp.
  3. 3While the bread toasts, prepare the topping. In a small bowl, combine the crumbled feta, softened cream cheese, and honey. Whip with a fork or hand mixer until the mixture is smooth and creamy.
  4. 4Once the crostini are cool, spread a generous layer of the whipped feta mixture on each slice.
  5. 5Top each crostini with a few mixed berries and a light drizzle of balsamic glaze. Finish with a tiny pinch of black pepper for complexity.

Chef's Tip & Pairing

A crisp, dry Rosé or a light-bodied Sauvignon Blanc will complement the salty cheese and sweet berries beautifully, making this a perfect pairing for a warm evening.
