Whipped Feta Summer Berry Balsamic Crostini

Ingredients

  • baguette, sliced 1/2 inch thick
  • tablespoons olive oil
  • ounces feta cheese, crumbled
  • ounces cream cheese, softened
  • tablespoon honey
  • 1/2 cup mixed summer berries (strawberries, blueberries)
  • tablespoons balsamic glaze
  • Pinch of freshly ground black pepper

Method

  1. Preheat oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange on a baking sheet. Toast for 8 minutes

  3. While the bread toasts, prepare the topping. In a small bowl, combine the crumbled feta, softened cream cheese, and honey. Whip with a fork or hand mixer until the mixture is smooth and creamy.
