Ingredients

  • baguette, sliced into 1/2-inch thick pieces
  • tablespoons olive oil (for bread)
  • oz fresh burrata cheese
  • 1/4 cup basil pesto
  • 1/2 cup jarred roasted red peppers, drained and thinly sliced
  • Pinch of sea salt
  • Fresh basil leaves, for garnish

Prep Steps

  1. 1Preheat oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet. Toast for 8 minutes
  2. 2minutes, or until golden brown and crisp.
  3. 3While the crostini are cooling, gently tear the burrata into small, manageable pieces.
  4. 4Spread a small amount of pesto onto each toasted crostini.
  5. 5Top the pesto with a piece of burrata and a few slices of roasted red pepper, arranging them to showcase the red, white, and green colors.
  6. 6Sprinkle with a pinch of sea salt and garnish with a small fresh basil leaf before serving.

Chef's Tip & Pairing

Pair this vibrant appetizer with a crisp, dry Italian white wine like a Vermentino or a light-bodied, slightly chilled red such as a young Chianti Classico. For an extra layer of flavor, drizzle a high-quality balsamic glaze over the finished crostini.
