A creamy, fresh burrata base is perfectly complemented by the vibrant, herbaceous flavor of homemade basil pesto. Topped with sweet, smoky roasted red peppers, this crostini is a patriotic and delicious bite that celebrates the colors of Italy. The toasted bread provides a satisfying crunch to balance the soft cheese.

Ingredients

  • baguette, sliced into 1/2-inch thick pieces
  • tablespoons olive oil (for bread)
  • oz fresh burrata cheese
  • 1/4 cup basil pesto
  • 1/2 cup jarred roasted red peppers, drained and thinly sliced
  • Pinch of sea salt
  • Fresh basil leaves, for garnish

Method

  1. Preheat oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet. Toast for 8 minutes

  3. While the crostini are cooling, gently tear the burrata into small, manageable pieces.
  4. Spread a small amount of pesto onto each toasted crostini.
  5. Top the pesto with a piece of burrata and a few slices of roasted red pepper, arranging them to showcase the red, white, and green colors.
  6. Sprinkle with a pinch of sea salt and garnish with a small fresh basil leaf before serving.
