St. Andrew's Blue Cheese & Fig Crostini

This crostini celebrates St. Andrew's Day with a rich, savory, and slightly sweet flavor profile, inspired by Scottish cuisine. The creamy, pungent blue cheese melts beautifully into the warm fig jam, while the toasted walnuts provide a satisfying crunch. It's a sophisticated appetizer that perfectly balances the earthiness of the cheese with the sweetness of the fruit.

Ingredients

  • baguette, sliced into 1/2-inch thick pieces
  • tablespoons olive oil
  • oz Scottish Blue Cheese (or other strong blue cheese like Roquefort), crumbled
  • 1/4 cup fig jam or preserves
  • 1/4 cup walnuts, roughly chopped and toasted
  • teaspoon fresh thyme leaves

Prep Steps

  1. 1Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet.
  2. 2Toast the bread for 5 minutes
  3. 3minutes, or until lightly golden and crisp. Remove from the oven and let cool slightly.
  4. 4Spread a thin layer of fig jam on each crostini base.
  5. 5Top the jam with a generous amount of crumbled blue cheese and a sprinkle of toasted walnuts.
  6. 6Return the crostini to the oven for 2 minutes
  7. 7minutes, just until the cheese begins to soften and the jam is warm. Garnish with fresh thyme leaves before serving.

Chef's Tip & Pairing

For an authentic Scottish pairing, serve this crostini with a dram of a light, fruity Speyside single malt whisky, or a glass of rich, honeyed Sauternes to complement the fig and blue cheese.
