  • baguette, sliced into 1/2-inch thick pieces
  • tablespoons olive oil
  • oz Scottish Blue Cheese (or other strong blue cheese like Roquefort), crumbled
  • 1/4 cup fig jam or preserves
  • 1/4 cup walnuts, roughly chopped and toasted
  • teaspoon fresh thyme leaves

Method

  1. Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet.
  2. Toast the bread for 5 minutes
