Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • oz fresh whole milk ricotta cheese
  • 1/4-Pinch of sea salt
  • tablespoon honey
  • Pinch of sea salt
  • tablespoons apricot preserves
  • Microgreens or finely chopped pistachios for garnish

Prep Steps

  1. 1Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and toast for 8 minutes
  2. 2minutes until golden and crisp.
  3. 3In a small bowl, combine the ricotta cheese, crushed saffron threads, honey, and sea salt. Mix gently until the saffron has evenly distributed its color and flavor.
  4. 4Once the crostini are cool, spread a generous layer of the saffron ricotta mixture onto each slice.
  5. 5Top the ricotta with a small dollop of apricot preserves and garnish with a few microgreens or a sprinkle of chopped pistachios for color and texture, then serve immediately.

Chef's Tip & Pairing

For a deeper saffron flavor, steep the threads in a teaspoon of warm milk for 10 minutes before adding the liquid and threads to the ricotta. A crisp, dry Prosecco or a light, floral Viognier would pair beautifully with the sweet and savory notes.
