These vibrant, sun-colored crostini are a perfect celebration of happiness and color, inspired by the spirit of World Emoji Day. A creamy, subtly sweet saffron-infused ricotta is spread over crisp baguette slices, then topped with a bright, tangy apricot preserve.

Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • oz fresh whole milk ricotta cheese
  • 1/4-Pinch of sea salt
  • tablespoon honey
  • Pinch of sea salt
  • tablespoons apricot preserves
  • Microgreens or finely chopped pistachios for garnish

Method

  1. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and toast for 8 minutes

  3. In a small bowl, combine the ricotta cheese, crushed saffron threads, honey, and sea salt. Mix gently until the saffron has evenly distributed its color and flavor.

Chef's Tip & Pairing

For a deeper saffron flavor, steep the threads in a teaspoon of warm milk for 10 minutes before adding the liquid and threads to the ricotta. A crisp, dry Prosecco or a light, floral Viognier would pair beautifully with the sweet and savory notes.
