Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons extra virgin olive oil
  • oz whole milk ricotta cheese
  • tablespoons high
  • quality honey, plus more for drizzling
  • 1/2 teaspoon dried culinary lavender
  • 1/4 teaspoon lemon zest
  • Pinch of sea salt
  • Freshly ground black pepper to taste

Prep Steps

  1. 1Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet. Toast for 8 minutes
  2. 2minutes, or until golden brown and crisp.
  3. 3While the bread toasts, prepare the topping. In a medium bowl, combine the ricotta cheese, 2 tablespoons of honey, dried lavender, lemon zest, and a pinch of sea salt.
  4. 4Use a whisk or a hand mixer to whip the mixture for 1 minutes
  5. 5minutes until it is light, fluffy, and smooth. Taste and adjust seasoning if necessary.
  6. 6Once the crostini are cooled slightly, spoon a generous dollop of the whipped ricotta mixture onto each slice.
  7. 7Finish by drizzling each crostini with a little extra honey and a light grind of black pepper before serving.

Chef's Tip & Pairing

For a perfect pairing, serve this crostini with a chilled glass of Moscato d'Asti; its light effervescence and sweet, fruity profile beautifully complement the honey and lavender.
