Grilled Watermelon & Feta Summer Crostini

Ingredients

  • baguette, sliced into 1/2-inch thick pieces
  • tablespoons olive oil, divided
  • cup cubed watermelon (1/2-inch cubes)
  • oz crumbled feta cheese
  • tablespoons balsamic glaze
  • tablespoon fresh mint, finely chopped
  • Pinch of sea salt and black pepper

Prep Steps

  1. 1Preheat a grill pan or outdoor grill to medium
  2. 2high heat. Brush the baguette slices with 1 tablespoon of olive oil and grill for 1 minutes
  3. 3minutes per side until lightly toasted and marked.
  4. 4Lightly brush the watermelon cubes with the remaining 1 tablespoon of olive oil. Grill the cubes for 30 minutes
  5. 5seconds per side, just until grill marks appear and the fruit is slightly softened but still holds its shape.
  6. 6Assemble the crostini: Top each toasted baguette slice with a few pieces of the grilled watermelon and a generous sprinkle of crumbled feta cheese.
