Grilled Watermelon & Feta Summer Crostini

This crostini is a perfect blend of sweet, salty, and refreshing. The lightly grilled watermelon adds a smoky depth that pairs beautifully with the tangy feta cheese. Finished with a drizzle of balsamic glaze and fresh mint, it's an ideal summer appetizer.

Ingredients

  • baguette, sliced into 1/2-inch thick pieces
  • tablespoons olive oil, divided
  • cup cubed watermelon (1/2-inch cubes)
  • oz crumbled feta cheese
  • tablespoons balsamic glaze
  • tablespoon fresh mint, finely chopped
  • Pinch of sea salt and black pepper

Method

  1. Preheat a grill pan or outdoor grill to medium
  2. high heat. Brush the baguette slices with 1 tablespoon of olive oil and grill for 1 minutes
  3. minutes per side until lightly toasted and marked.
  4. Lightly brush the watermelon cubes with the remaining 1 tablespoon of olive oil. Grill the cubes for 30 minutes
  5. seconds per side, just until grill marks appear and the fruit is slightly softened but still holds its shape.
  6. Assemble the crostini: Top each toasted baguette slice with a few pieces of the grilled watermelon and a generous sprinkle of crumbled feta cheese.
  7. Garnish with the finely chopped fresh mint, a pinch of sea salt and black pepper, and a drizzle of balsamic glaze.

Chef's Tip & Pairing

For an extra layer of flavor, infuse the olive oil with a sprig of rosemary before brushing the bread. Pair this refreshing appetizer with a crisp, dry Rosé or a light-bodied Sauvignon Blanc.
