Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup vanilla frozen custard, slightly softened
  • 1/4 cup fresh raspberries
  • teaspoon lemon zest, for garnish

Prep Steps

  1. 1Preheat your oven to 350°F (175°C). Brush both sides of the baguette slices with melted butter and arrange them on a baking sheet.
  2. 2In a small bowl, mix the granulated sugar and cinnamon. Sprinkle the mixture evenly over one side of the buttered bread slices.
  3. 3Bake for 8 minutes
  4. 4minutes, or until the crostini are golden brown and crisp. Let them cool completely on a wire rack.
  5. 5Just before serving, top each cooled crostini with a small dollop (about 1 teaspoon) of slightly softened vanilla frozen custard.
  6. 6Garnish each crostini with one or two fresh raspberries and a tiny sprinkle of lemon zest. Serve immediately.

Chef's Tip & Pairing

For the best texture, ensure the crostini are completely cool before adding the frozen custard, and serve immediately to prevent the custard from melting too quickly. A light, slightly sweet sparkling wine, such as a Moscato d'Asti, would pair beautifully with this dessert.
