Festive Cranberry Brie and Pecan Crostini

Ingredients

  • French baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • oz wheel of Brie cheese, rind removed and cut into small pieces
  • 1/4 cup whole cranberry sauce or relish
  • tablespoons chopped pecans, lightly toasted
  • teaspoon fresh thyme leaves
  • Pinch of sea salt and black pepper

Prep Steps

  1. 1Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet.
  2. 2Toast the crostini for 5 minutes
  3. 3minutes until lightly golden and crisp, then remove from the oven.
  4. 4Top each toasted slice with a piece of Brie cheese and return the baking sheet to the oven for 2 minutes
  5. 5minutes, or until the Brie is soft and just beginning to melt.
  6. 6Carefully remove the crostini and immediately top each with a small dollop of cranberry sauce, a sprinkle of toasted pecans, and a few fresh thyme leaves.
  7. 7Season lightly with a pinch of sea salt and black pepper before serving warm.
