Festive Cranberry Brie and Pecan Crostini

These festive bites perfectly balance the creamy, melted richness of baked Brie with the tart sweetness of homemade cranberry relish. Topped with toasted pecans and fresh thyme, this crostini offers a delightful textural contrast and a warm, inviting flavor profile that is ideal for any winter gathering.

Ingredients

  • French baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • oz wheel of Brie cheese, rind removed and cut into small pieces
  • 1/4 cup whole cranberry sauce or relish
  • tablespoons chopped pecans, lightly toasted
  • teaspoon fresh thyme leaves
  • Pinch of sea salt and black pepper

Method

  1. Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet.
  2. Toast the crostini for 5 minutes
  3. minutes until lightly golden and crisp, then remove from the oven.
  4. Top each toasted slice with a piece of Brie cheese and return the baking sheet to the oven for 2 minutes
