Ingredients

  • 1 French baguette, sliced into 1/2 inch thick rounds (about 24 slices)
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1 medium red beet, roasted, peeled, and diced
  • 1 medium golden beet, roasted, peeled, and diced
  • 4 ounces soft goat cheese (chèvre), softened
  • 1 tablespoon fresh thyme leaves, divided
  • 1 tablespoon honey, or to taste
  • Salt and freshly ground black pepper to taste

Prep Steps

  1. 1Preheat oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet.

  3. 3minutes, flipping halfway, until golden brown and crisp. Remove from oven and let cool slightly.
