Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • oz wheel of brie cheese, rind removed and cut into small pieces
  • 1/4 cup whole cranberry sauce (canned or homemade)
  • tablespoon chopped fresh rosemary
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • tablespoon toasted chopped walnuts (for garnish)

Prep Steps

  1. 1Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet.
  2. 2Bake the crostini for 8 minutes
  3. 3minutes, or until lightly golden and crisp. Remove from the oven and let cool slightly.
  4. 4Top each crostini with a piece of brie cheese and a small dollop of cranberry sauce. Sprinkle with sea salt, black pepper, and half of the chopped rosemary.
  5. 5Return the crostini to the oven for 3 minutes
  6. 6minutes, just until the brie is melted and gooey.
  7. 7Garnish immediately with the remaining fresh rosemary and toasted chopped walnuts before serving warm.

Chef's Tip & Pairing

For an extra layer of flavor, try substituting the cranberry sauce with a fig jam or a spiced pear preserve. A crisp, dry Rosé or a light-bodied Pinot Noir would pair beautifully with the creamy cheese and tart fruit.
