Boxing Day Brie and Caramelized Onion Crostini

Ingredients

  • small baguette, sliced on the diagonal into 1/2-inch thick pieces
  • tbsp olive oil, plus extra for brushing
  • large yellow onion, thinly sliced
  • tsp fresh thyme leaves
  • Pinch of salt and black pepper
  • oz wheel of brie cheese, rind on, sliced into small pieces
  • tbsp balsamic glaze (optional)

Prep Steps

  1. 1In a small skillet, heat 2 tbsp of olive oil over medium
  2. 2low heat. Add the sliced onion and a pinch of salt. Cook slowly for 15 minutes
  3. 3minutes, stirring occasionally, until deeply golden and caramelized. Stir in the fresh thyme leaves.
  4. 4Preheat oven to 375°F (190°C). Brush both sides of the baguette slices lightly with olive oil and arrange them on a baking sheet.
  5. 5Toast the baguette slices for 5 minutes
  6. 6minutes, until lightly golden and crisp.
  7. 7Top each toasted crostini with a small slice of brie cheese and a spoonful of the warm caramelized onion mixture.
