  • 1 baguette, thinly sliced
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 cup red grapes, halved
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons balsamic glaze
  • 1/4 cup fresh mint leaves, finely chopped
  • Pinch of black pepper

Method

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet. Drizzle lightly with olive oil.
  2. Bake for 8-10 minutes minutes, or until golden brown and crisp. Remove from oven and let cool slightly.
  3. In a small bowl, gently toss the halved red grapes with a drizzle of olive oil and a pinch of black pepper.
  4. Top each toasted crostini with crumbled feta cheese, followed by the seasoned grapes.
  5. Drizzle generously with balsamic glaze and sprinkle with fresh mint leaves before serving.
