This luxurious crostini combines the creamy texture of fresh ricotta with the salty bite of prosciutto di Parma. A drizzle of aromatic truffle-infused honey elevates the appetizer, creating a perfect balance of sweet, savory, and earthy notes.

Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • 1/2 cup fresh whole milk ricotta cheese
  • tablespoons grated Parmesan cheese
  • 1/4 teaspoon sea salt
  • Pinch of black pepper
  • slices prosciutto di Parma, thinly sliced and torn
  • tablespoon truffle honey
  • Fresh chives, finely chopped, for garnish

Method

  1. Preheat oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and toast on a baking sheet for 8 minutes
  2. minutes, or until golden brown and crisp.
  3. While the bread toasts, combine the ricotta cheese, Parmesan cheese, salt, and pepper in a small bowl. Mix gently until just combined.
  4. Once the crostini are cooled slightly, spread a generous layer of the seasoned ricotta mixture onto each slice.
  5. Top each crostini with a small piece of torn prosciutto.
  6. Drizzle the truffle honey over the prosciutto and ricotta, and finish with a sprinkle of fresh chives. Serve immediately.

Chef's Tip & Pairing

For an extra layer of flavor, lightly toast the prosciutto in a pan for 30 seconds before tearing and placing it on the crostini. This adds a delightful crispness.
