Ingredients

  • 1 baguette, thinly sliced
  • 4 ounces fresh goat cheese, softened
  • 8 slices prosciutto di Parma, thinly sliced
  • 4 fresh figs, quartered, or 2 tablespoons fig jam
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Fresh basil leaves, for garnish
  • Pinch of sea salt and freshly ground black pepper

Method

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet.
  2. Lightly brush both sides of the baguette slices with olive oil. Toast in the preheated oven for 5-7 minutes minutes, or until golden and crisp.
  3. Remove crostini from the oven and allow to cool slightly.
  4. Spread a generous amount of softened goat cheese on each toasted crostini.
  5. Top each crostini with a slice of prosciutto, artfully folded.
  6. Place a quartered fresh fig (or a dollop of fig jam) on top of the prosciutto.
  7. Drizzle with balsamic glaze and garnish with fresh basil leaves.
  8. Season lightly with sea salt and freshly ground black pepper before serving.
