Ingredients

  • baguette, sliced into 1/2-inch rounds
  • large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/4 cup dry sherry or white wine
  • 1/2 cup beef or vegetable broth
  • 1 teaspoon fresh thyme leaves
  • 4 oz Gruyère cheese, shredded
  • Salt and freshly ground black pepper to taste

Prep Steps

  1. 1In a large skillet, melt butter and olive oil over medium
  2. 2low heat. Add the sliced onions and a pinch of salt. Cook slowly for 25 minutes
  3. 3minutes, stirring occasionally, until the onions are deeply caramelized and a rich brown color.
  4. 4Deglaze the pan with sherry, scraping up any browned bits. Add the broth and thyme, and simmer until the liquid has reduced to a thick, syrupy glaze (about 5 minutes). Season with pepper and set aside.
  5. 5Preheat your oven to 375°F (190°C). Brush the baguette slices lightly with olive oil and toast on a baking sheet for 5 minutes
  6. 6minutes until lightly golden and crisp.
  7. 7Top each toasted crostini with a spoonful of the caramelized onion mixture, then generously sprinkle with shredded Gruyère cheese.
  8. 8Return the crostini to the oven and broil on high for 1 minutes
  9. 9minutes, watching carefully, until the cheese is bubbly and golden brown. Serve immediately.

Chef's Tip & Pairing

For an extra layer of flavor, use a mix of Gruyère and a sharp Provolone cheese. This dish pairs beautifully with a medium-bodied, earthy Pinot Noir, which complements the savory depth of the caramelized onions.
