  • baguette, sliced 1/2-inch thick
  • tbsp olive oil
  • oz feta cheese, crumbled
  • oz cream cheese, softened
  • tbsp fresh lime juice
  • 1/2

  • (15 oz) can black beans, rinsed and drained
  • 1/4 cup water
  • 1/2
  • small red onion, thinly sliced
  • 1/4 cup white vinegar
  • tbsp granulated sugar
  • 1/2

  • tbsp chopped fresh cilantro
  • 1/4 cup crushed blue corn tortilla chips (for garnish)

Method

  1. Prepare the pickled onions: Combine vinegar, sugar, and salt in a small bowl. Add the sliced red onion and let it sit for at least 15 minutes. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and toast for 8 minutes

  3. Make the whipped feta: In a food processor, combine feta, cream cheese, lime juice, chipotle powder, and cumin. Process until completely smooth and creamy, scraping down the sides as needed.
  4. Prepare the black bean mash: In a small saucepan, combine the rinsed black beans and 1/4 cup of water. Bring to a simmer, then mash roughly with a fork or potato masher. Season with salt and pepper to taste.
  5. Assemble the crostini: Spread a generous layer of the spicy whipped feta onto each toasted crostini. Top with a spoonful of the warm black bean mash.
  6. Garnish and serve: Drain the pickled red onions and place a few slices on top of the black beans. Sprinkle with fresh cilantro and a pinch of crushed blue corn tortilla chips for texture. Serve immediately.
