Cheese & Dairy

Ingredients

  • 1 baguette, thinly sliced and toasted
  • 4 ounces burrata cheese, torn into pieces
  • 3 ounces spicy pepperoni, thinly sliced
  • 1/4 cup San Marzano tomato sauce, seasoned
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh basil, chopped
  • 1/2 teaspoon red pepper flakes (optional, for extra spice)
  • Pinch of sea salt and freshly ground black pepper

Method

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and lightly brush with olive oil. Toast for 5-7 minutes minutes until golden.
  2. Spread a thin layer of seasoned San Marzano tomato sauce on each toasted crostini.
  3. Top each crostini with a few slices of spicy pepperoni.
  4. Place the crostini back in the oven for 3-5 minutes minutes, or until the pepperoni is slightly crispy and the sauce is warmed through.
  5. Remove from oven and immediately top each crostini with torn pieces of creamy burrata cheese.
  6. Garnish with fresh chopped basil and a sprinkle of red pepper flakes, if desired.
  7. Season with a pinch of sea salt and freshly ground black pepper before serving.

Chef's Tip & Pairing

To ensure the crostini stays crisp and doesn't become soggy, use a thick, slow-roasted tomato sauce or reduce a high-quality marinara on the stovetop until it is very concentrated. Pair this savory, spicy appetizer with a medium-bodied Italian red wine, such as a Chianti Classico, to complement the tomato and pepperoni.
