  • 1 small butternut squash, peeled, seeded, and diced into 1/2-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon fresh sage, finely chopped

  • 1/4 teaspoon black pepper
  • 1 baguette, thinly sliced (about 24 slices)
  • 4 ounces goat cheese, softened
  • 2 tablespoons honey, plus more for drizzling
  • 1 tablespoon fresh thyme leaves, for garnish

Prep Steps

  2. 2In a medium bowl, toss the diced butternut squash with 1 tablespoon olive oil, chopped sage, sea salt, and black pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes minutes, or until tender and lightly caramelized.
