This appetizer offers a refreshing, savory bite that celebrates the flavors of the Mediterranean, perfect for a gathering focused on unity and goodwill. The bright green pesto and white feta create a visually peaceful and appealing presentation.

Ingredients

  • 1 baguette, thinly sliced
  • 2 tablespoons olive oil
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons heavy cream
  • 1/4 cup shelled pistachios, roughly chopped
  • 1 tablespoon fresh mint, finely chopped
  • 1 teaspoon honey
  • Pinch of black pepper

Method

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet.
  2. Drizzle baguette slices with olive oil and toast in the oven for 5-7 minutes minutes, or until lightly golden and crisp. Set aside to cool.
  3. In a small bowl, combine crumbled feta cheese and heavy cream. Whip with a fork until smooth and creamy.
  4. In another small bowl, combine chopped pistachios, fresh mint, and honey. Mix well.
  5. Spread a generous amount of whipped feta onto each toasted crostini.
  6. Top the whipped feta with the pistachio and mint mixture.
  7. Finish with a pinch of black pepper and serve immediately.

Chef's Tip & Pairing

The bright acidity of a crisp, dry white wine like Sauvignon Blanc or a light, herbal Vermentino will beautifully complement the salty feta and fresh mint in this crostini. To ensure the pesto is smooth, blanch the mint and basil leaves briefly before processing.
