The creamy, slightly tangy goat cheese is beautifully balanced by the sweetness of the fig jam and the earthy crunch of the toasted walnuts. Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons extra virgin olive oil
  • oz soft goat cheese (chèvre)
  • 1/4 cup fig jam or preserves
  • 1/4 cup toasted walnuts, roughly chopped
  • teaspoon fresh thyme leaves
  • Pinch of sea salt and freshly ground black pepper

Method

  1. Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet.
  2. Toast the crostini for 8 minutes
