This vibrant crostini is a celebration of spring flavors, combining the bright, peppery notes of radishes with the creamy tang of whipped goat cheese. Ingredients

  • 1 artisanal baguette, thinly sliced and lightly toasted
  • 1 bunch breakfast radishes, thinly sliced
  • 1 bunch French breakfast radishes, thinly sliced
  • 4 ounces fresh goat cheese, softened
  • 2 tablespoons fresh mint, finely chopped
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons local wildflower honey
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and toast for 5-7 minutes minutes, or until lightly golden and crisp. Let cool slightly.
  2. In a small bowl, gently combine the softened goat cheese with the finely chopped fresh mint. Season with a pinch of flaky sea salt and freshly ground black pepper.
  3. In another small bowl, toss the thinly sliced breakfast and French breakfast radishes with extra virgin olive oil. Season lightly with flaky sea salt.
  4. To assemble the crostini, spread a generous layer of the mint goat cheese mixture onto each toasted baguette slice.
  5. Arrange the seasoned radish slices artfully over the goat cheese.
  6. Drizzle each crostini with a touch of local wildflower honey.
  7. Garnish with a few extra mint leaves, if desired, and serve immediately.
