Ingredients

  • 1 baguette, sliced diagonally into 1/2-inch pieces
  • 2 tablespoons extra virgin olive oil
  • 1 cup whole milk ricotta cheese, drained
  • 1 large lemon, zested and juiced
  • 2 tablespoons high
  • quality honey, plus more for drizzling
  • 1/4 teaspoon fine sea salt, plus more for finishing
  • Fresh mint leaves, thinly sliced (optional, for garnish)

Prep Steps

  1. 1Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet.
  2. 2Toast the slices for 8 minutes
  3. 3minutes, flipping halfway, until golden brown and crisp. Set aside to cool slightly.
  4. 4In a medium bowl, combine the drained ricotta cheese, lemon zest, 1 tablespoon of lemon juice, 2 tablespoons of honey, and 1/4 teaspoon of sea salt.
  5. 5Use a whisk or a hand mixer to whip the mixture for 1 minutes
  6. 6minutes until it is light, fluffy, and smooth, resembling a cloud. Taste and adjust lemon or honey as desired.
  7. 7Once the crostini slices are cool, generously spread the lemon ricotta mixture onto each piece.
  8. 8Drizzle a small amount of extra honey over the top of each crostini.
  9. 9Garnish with a tiny pinch of sea salt and a few slivers of fresh mint, if using. Serve immediately.

Chef's Tip & Pairing

For a perfect pairing, serve this crostini with a crisp, dry Italian white wine like a Vermentino or a light, bubbly Prosecco. A quick tip: always drain your ricotta for at least 30 minutes in a cheesecloth or fine-mesh sieve to prevent a watery spread.
