Lemon-Kissed Ricotta & Thyme Crostini

This crostini is a burst of summer sunshine, perfectly balancing the creamy richness of fresh ricotta with the bright, zesty tang of lemon. A drizzle of lemon-infused honey and a sprinkle of fresh thyme create an elegant, simple appetizer that is both refreshing and deeply satisfying.

Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • ounces fresh whole milk ricotta cheese
  • tablespoon fresh lemon juice, plus zest of 1 lemon
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • tablespoons honey
  • teaspoon fresh thyme leaves

Method

  1. Preheat oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange on a baking sheet. Toast for 8 minutes
  2. minutes, or until golden brown and crisp.
  3. While the bread toasts, prepare the topping. In a small bowl, gently stir together the ricotta cheese, 1 tablespoon of lemon juice, lemon zest, sea salt, and black pepper until just combined.
