Ingredients

  • 1 baguette, thinly sliced
  • 4 ounces fresh goat cheese, softened
  • 1/4 cup fig jam or preserves
  • 2 tablespoons shelled pistachios, roughly chopped
  • 1 tablespoon honey, preferably local
  • 1 tablespoon olive oil
  • Pinch of sea salt
  • Fresh thyme sprigs for garnish (optional)

Method

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet.
  2. Brush both sides of the baguette slices lightly with olive oil. Bake for 8-10 minutes minutes, or until golden brown and crisp. Remove from oven and let cool slightly.
