Heirloom Tomato and Burrata Pizza Crostini

Ingredients

  • small baguette, sliced into 1/2-inch thick rounds
  • tablespoons extra virgin olive oil
  • clove garlic, halved
  • oz burrata cheese, torn into pieces
  • 1/2 cup mixed heirloom cherry tomatoes, halved
  • tablespoons fresh basil pesto or basil oil
  • Pinch of sea salt and freshly ground black pepper

Prep Steps

  1. 1Preheat oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and toast on a baking sheet for 8 minutes
  2. 2minutes until lightly golden and crisp.
  3. 3While the crostini are still warm, gently rub the cut side of the garlic clove over the surface of each slice for a subtle flavor.
  4. 4Top each crostini with a piece of torn burrata cheese and a few halves of the heirloom cherry tomatoes. Season lightly with sea salt and pepper.
  5. 5Return the crostini to the oven for 2 minutes
  6. 6minutes, just until the burrata is slightly softened and warmed through.
  7. 7Remove from the oven and immediately drizzle with fresh basil oil or pesto before serving.

Chef's Tip & Pairing

For an extra layer of flavor, try finishing the crostini with a sprinkle of high-quality Maldon sea salt flakes and a very light grating of fresh lemon zest.
