Ingredients

  • 1 crusty baguette, thinly sliced
  • 2 ripe California avocados, mashed with a fork
  • 1 cup mixed heirloom cherry tomatoes, halved
  • 4 ounces fresh burrata cheese, torn into pieces
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon flaky sea salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  • 1/4 cup fresh basil leaves, thinly sliced (chiffonade)
  • 1 tablespoon balsamic glaze, for drizzling

Method

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet. Lightly brush both sides of each slice with olive oil.
  2. Toast the baguette slices in the preheated oven for 8-10 minutes minutes, or until golden brown and crisp. Remove from oven and let cool slightly.
  3. In a medium bowl, gently mash the ripe avocados with a fork. Stir in the fresh lemon juice, 1/2 teaspoon flaky sea salt, and 1/4 teaspoon freshly ground black pepper. Mix until just combined, leaving some texture.
  4. Evenly spread the mashed avocado mixture over each toasted baguette slice.
  5. Top the avocado with the halved heirloom cherry tomatoes and torn burrata cheese pieces.
  6. Garnish the crostini with fresh basil chiffonade. Drizzle lightly with extra virgin olive oil and balsamic glaze just before serving.
