This crostini is a celebration of golden hues and comforting flavors, much like the beloved Golden Retriever. Sweet, earthy roasted golden beets pair beautifully with tangy goat cheese, all drizzled with a touch of local honey for a perfect balance. The crunch of the toasted baguette provides a satisfying contrast to the creamy toppings.

Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil, plus more for drizzling
  • medium golden beet, roasted, peeled, and diced
  • oz soft goat cheese (chèvre)
  • tablespoons liquid honey
  • teaspoon fresh thyme leaves
  • Pinch of sea salt and black pepper

Method

  1. Preheat your oven to 375°F (190°C). Brush the baguette slices with olive oil and toast for 8 minutes
  2. minutes, or until lightly golden and crisp.
  3. While the bread is toasting, gently mix the diced golden beet with 1 tablespoon of olive oil, a pinch of salt, and pepper in a small bowl.
  4. Once the crostini are cooled slightly, spread a generous layer of goat cheese on each slice.
  5. Top the goat cheese with a spoonful of the seasoned golden beets and sprinkle with fresh thyme leaves.
  6. Finish each crostini with a light drizzle of honey just before serving.

Chef's Tip & Pairing

For an extra layer of flavor, infuse your honey with a sprig of rosemary for 24 hours before drizzling. This crostini pairs wonderfully with a crisp, dry white wine like a Sancerre or a light, unoaked Chardonnay.
