Ingredients

  • small baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • oz fresh whole milk ricotta cheese
  • tablespoons high
  • quality honey, plus extra for drizzling
  • fresh passion fruits, halved
  • teaspoon finely chopped fresh mint
  • Pinch of sea salt

Method

  1. Preheat your oven to 350°F (175°C). Brush both sides of the baguette slices with olive oil and toast on a baking sheet for 8 minutes

  3. In a small bowl, gently whisk the ricotta cheese with 2 tablespoons of honey and a pinch of sea salt until smooth and creamy.
