This crostini celebrates the spirit of World Food Day with a hearty, nutritious base of creamy French green lentils blended with aromatic herbs. Topped with sweet, smoky roasted red peppers and a sprinkle of tangy feta, it offers a satisfying balance of earthy, sweet, and savory flavors.

Ingredients

  • 1 crusty baguette, thinly sliced
  • 4 ounces creamy goat cheese, softened
  • 1/2 cup cooked green lentils, seasoned
  • 1/2 cup roasted red peppers, finely diced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon balsamic glaze
  • Pinch of sea salt and freshly ground black pepper

Method

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet.
  2. Lightly brush each baguette slice with olive oil and toast in the preheated oven for 5-7 minutes minutes, or until golden and crisp.
  3. In a small bowl, combine the softened goat cheese with a pinch of salt and pepper.
  4. In another bowl, gently mix the seasoned cooked lentils with the finely diced roasted red peppers.
  5. Once the crostini are toasted, spread a generous layer of the goat cheese mixture onto each slice.
  6. Top the goat cheese with a spoonful of the lentil and roasted red pepper mixture.
  7. Drizzle each crostini with balsamic glaze and sprinkle with fresh chopped basil.
  8. Serve immediately.
