This crostini is a celebration of global flavors, uniting the creamy tang of Mediterranean feta with the sweet heat of Asian chili-sesame oil. Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tbsp olive oil
  • oz block of good quality feta cheese, crumbled
  • oz cream cheese, softened
  • tbsp honey, plus extra for drizzling
  • tsp toasted sesame oil
  • 1/2
  • tsp chili garlic sauce (e.g., Sriracha or Sambal Oelek)
  • 1/4 cup finely chopped roasted red pepper (from a jar)
  • tbsp toasted sesame seeds, for garnish
  • Pinch of black pepper

Method

  1. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and toast for 8 minutes
  2. minutes until golden and crisp. Set aside to cool.
  3. In a food processor, combine the crumbled feta, softened cream cheese, and 1 tablespoon of honey. Process until completely smooth and whipped, scraping down the sides as needed.
  4. In a small bowl, mix the chili garlic sauce, sesame oil, and chopped roasted red pepper to create the fusion topping.

Chef's Tip & Pairing

A crisp, dry Sauvignon Blanc with its bright acidity and citrus notes will beautifully cut through the richness of the feta and complement the subtle heat of the chili-sesame topping. Alternatively, a light-bodied, slightly sweet Rosé would also pair well.
