Galactic Gorgonzola and Fig Crostini

Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • oz Gorgonzola cheese, crumbled
  • tablespoons fig jam
  • slices prosciutto, thinly sliced and torn into small pieces
  • teaspoon fresh thyme leaves

Prep Steps

  1. 1Preheat oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and toast on a baking sheet for 5 minutes
  2. 2minutes until lightly golden.
  3. 3Remove the crostini from the oven and spread 1/2 teaspoon of fig jam on each slice.
  4. 4Top the jam with a generous crumble of Gorgonzola cheese.
  5. 5Return the crostini to the oven and bake for 3 minutes
  6. 6minutes, or until the cheese is melted and bubbly.
  7. 7Garnish immediately with a small piece of prosciutto and a sprinkle of fresh thyme leaves.
