The creamy, whipped feta provides a smooth base, beautifully contrasted by the delicate saltiness of prosciutto and the rich sweetness of balsamic-glazed figs. It's a simple yet elegant appetizer that sets a celebratory mood.

Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • oz feta cheese, crumbled
  • oz cream cheese, softened
  • tablespoon milk or heavy cream
  • 1/4 cup fig jam
  • tablespoon balsamic glaze
  • slices prosciutto, thinly sliced and torn
  • tablespoons chopped pistachios
  • Fresh thyme sprigs, for garnish

Method

  1. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and toast for 8 minutes
  2. minutes until golden and crisp. Let cool.
  3. While the bread cools, prepare the whipped feta: combine feta cheese, cream cheese, and milk in a food processor. Blend until completely smooth and creamy.
  4. In a small bowl, mix the fig jam and balsamic glaze to create a richer topping.
  5. To assemble, spread a generous layer of the whipped feta mixture onto each crostini.
  6. Top with a small dollop of the balsamic fig jam, a piece of torn prosciutto, a sprinkle of chopped pistachios, and a tiny sprig of fresh thyme.

Chef's Tip & Pairing

For an extra layer of flavor, lightly toast the chopped pistachios in a dry pan before using. This crostini pairs wonderfully with a crisp, dry Prosecco or a light-bodied Pinot Noir.
