Festive Cranberry Brie and Rosemary Crostini

A warm, festive appetizer, this crostini is the perfect bite to celebrate the holiday season. The creamy, melted brie pairs perfectly with the tart cranberry sauce and the aromatic, earthy rosemary. Finished with a sweet and tangy balsamic glaze, this appetizer is a guaranteed crowd-pleaser.

Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • oz wheel of brie cheese, sliced
  • 1/4 cup whole cranberry sauce (canned or homemade)
  • tablespoon fresh rosemary, finely chopped
  • tablespoon balsamic glaze
  • Pinch of sea salt

Method

  1. Preheat oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange on a baking sheet. Bake for 5 minutes
  2. minutes until lightly golden and crisp.
  3. Remove the crostini from the oven. Top each slice with a piece of brie cheese.
  4. Return to the oven for 3 minutes

  6. Carefully remove from the oven and immediately top each with a small spoonful of cranberry sauce and a sprinkle of fresh rosemary.
  7. Drizzle with balsamic glaze and a tiny pinch of sea salt before serving warm.

For an extra layer of flavor, toast the baguette slices with a light rub of a garlic clove before adding the brie. This crostini pairs beautifully with a crisp, dry Prosecco or a light-bodied Pinot Noir.
