Cranberry Brie Prosciutto with Rosemary Drizzle

A perfect blend of holiday flavors, this crostini offers a creamy, salty, and tart experience in every bite. The warm, melted brie pairs beautifully with the salty prosciutto and bright cranberry, all finished with a fragrant rosemary-infused honey. This appetizer is ideal for a winter gathering or a festive holiday party.

Ingredients

  • small baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • oz wheel of Brie cheese, rind removed and cut into small pieces
  • slices prosciutto, torn into small pieces
  • 1/4 cup whole berry cranberry sauce
  • tablespoon honey
  • 1/2 teaspoon fresh rosemary, finely chopped
  • Pinch of black pepper

Prep Steps

  1. 1Preheat oven to 375°F (190°C). Brush the baguette slices lightly with olive oil and toast on a baking sheet for 5 minutes
  2. 2minutes until lightly golden and crisp.
  3. 3While the bread toasts, gently warm the honey and chopped rosemary in a small saucepan over low heat for 2 minutes to infuse the flavor, then set aside.
  4. 4Remove the crostini from the oven and top each slice with a piece of Brie cheese and a small dollop of cranberry sauce.
  5. 5Return the crostini to the oven for 3 minutes
  6. 6minutes, or until the Brie is melted and gooey.
  7. 7Top each warm crostini with a piece of torn prosciutto and a light drizzle of the rosemary
  8. 8infused honey. Serve immediately.

Chef's Tip & Pairing

The saltiness of the prosciutto and the sweetness of the cranberry and honey make this an excellent pairing for a crisp, slightly acidic white wine like a dry Prosecco or a Pinot Grigio.
