Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • tablespoons olive oil
  • oz soft goat cheese (chèvre)
  • 1/4 cup fig jam or preserves
  • tablespoon unsweetened cocoa powder
  • 1/2 teaspoon sea salt
  • Fresh thyme sprigs for garnish

Prep Steps

  1. 1Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet.
  2. 2Toast the slices for 8 minutes
  3. 3minutes, flipping halfway, until they are lightly golden and crisp. Remove from oven and let cool slightly.
  4. 4In a small bowl, mix the goat cheese with the sea salt until smooth and spreadable.
  5. 5Spread a thin layer of fig jam on each crostini, followed by a generous dollop of the seasoned goat cheese.
  6. 6Lightly dust the top of the goat cheese with unsweetened cocoa powder and garnish with a tiny sprig of fresh thyme before serving.

Chef's Tip & Pairing

For an extra layer of flavor, lightly toast the cocoa powder in a dry pan for 30 seconds before dusting; this deepens the chocolate notes and removes any raw bitterness. A glass of ruby Port or a medium-bodied Pinot Noir would pair beautifully with the sweet fruit and earthy cheese.
