Caramelized Apple and Sharp Cheddar Crostini

This crostini celebrates the bounty of the apple harvest with a perfect balance of sweet and savory. Thinly sliced apples are slowly caramelized in butter and brown sugar, then paired with a robust, sharp cheddar cheese. The combination of the warm, soft apple, the melted cheese, and the crisp bread is an absolute delight.

Ingredients

  • 1 baguette, thinly sliced
  • 2 Granny Smith apples, cored and thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon light brown sugar
  • 4 ounces sharp cheddar cheese, thinly sliced or grated
  • 1 tablespoon fresh thyme leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • Pinch of sea salt
  • Freshly ground black pepper, to taste

Method

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and lightly brush with olive oil. Toast for 5-7 minutes minutes, or until golden brown and crisp.
  2. In a medium skillet, melt butter over medium heat. Add apple slices and cook for 5 minutes, stirring occasionally, until slightly softened.
  3. Sprinkle brown sugar over the apples and continue to cook for another 3-5 minutes, or until apples are tender and caramelized. Remove from heat.
  4. Top each toasted baguette slice with a spoonful of caramelized apples, then a slice or a sprinkle of sharp cheddar cheese.
  5. Return the crostini to the oven and bake for 3-5 minutes minutes, or until the cheese is melted and bubbly.
  6. Garnish with fresh chopped thyme, a pinch of sea salt, and freshly ground black pepper before serving.

The acidity of the Granny Smith apple cuts through the richness of the cheddar beautifully. For a wine pairing, try a crisp, unoaked Chardonnay or a light, slightly chilled Pinot Noir to complement the fruit and spice notes.
