Tini Crostini

The sharp, tangy bite of blue cheese is beautifully contrasted by the sweet crunch of homemade candied pecans. Drizzled with a touch of golden honey, this appetizer offers a complex and satisfying blend of textures and flavors, perfect for a sophisticated celebration of National Candy Day.

Cheese & Dairy

Ingredients

  • 1 large baguette, thinly sliced
  • 4 ounces high-quality blue cheese, crumbled (e.g., Gorgonzola or Roquefort)
  • 1/2 cup candied pecans, roughly chopped
  • 3 tablespoons artisanal honey (e.g., clover or wildflower)
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon fresh thyme leaves, for garnish (optional)

Method

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet.
  2. Lightly brush each baguette slice with extra virgin olive oil. Bake for 8-10 minutes minutes, or until golden brown and crisp. Remove from oven and let cool slightly.
  3. While crostini are cooling, gently warm the honey if it's too thick for drizzling.
  4. Once crostini are cool enough to handle, generously drizzle each with warm honey.
  5. Evenly distribute the crumbled blue cheese over the honey-drizzled crostini.
  6. Top each crostini with a sprinkle of chopped candied pecans.
  7. Season lightly with sea salt and freshly ground black pepper. Garnish with fresh thyme leaves, if desired, before serving immediately.

Chef's Tip & Pairing

A robust, slightly sweet dessert wine like a Sauternes or a Port would be an exceptional pairing, as its sweetness will complement the honey and candied nuts while its body stands up to the pungent blue cheese.
