  • 1 baguette, thinly sliced and toasted
  • 8 ounces fresh goat cheese, softened
  • 1/2 cup fresh blackberries
  • 2 tablespoons honey, plus more for drizzling
  • 1 tablespoon fresh thyme leaves, finely chopped
  • 1 tablespoon olive oil
  • Pinch of black pepper
  • Flaky sea salt, to taste

Method

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet. Drizzle lightly with olive oil and toast for 5-7 minutes minutes, or until golden and crisp.
  2. In a small bowl, gently mash the fresh blackberries with a fork, leaving some whole for texture.
  3. In another bowl, combine the softened goat cheese, 2 tablespoons of honey, and chopped fresh thyme. Mix until well combined.
  4. Spread a generous amount of the goat cheese mixture onto each toasted baguette slice.
  5. Top each crostini with a spoonful of the mashed blackberries.
  6. Drizzle with additional honey and sprinkle with a pinch of black pepper and flaky sea salt before serving.
