Balsamic Raspberry & Basil Goat Cheese Crostini

The creamy, sharp goat cheese is beautifully complemented by the burst of fresh raspberries and the aromatic lift of basil. Ingredients

  • baguette, sliced into 1/2-inch thick rounds
  • oz soft goat cheese (chèvre), at room temperature
  • tablespoon extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 1/2 cup fresh raspberries
  • tablespoon fresh basil, thinly sliced (chiffonade)
  • tablespoons balsamic glaze (or balsamic reduction)

Method

  1. Preheat your oven to 350°F (175°C). Arrange the baguette slices on a baking sheet, brush lightly with olive oil, and sprinkle with a pinch of salt. Toast for 5 minutes
