A perfect marriage of creamy, earthy brie and crisp, sweet apple, elevated by a drizzle of golden honey and a whisper of fresh thyme. This crostini is a sophisticated bite that captures the essence of a sun-drenched autumn afternoon, offering a delightful balance of textures and flavors.

Ingredients

  • 1 small baguette, sliced into 1/2-inch thick rounds
  • 2 tablespoons extra virgin olive oil
  • 4 ounces high
  • quality Brie cheese, sliced
  • 1 Honeycrisp or Granny Smith apple, thinly sliced
  • 2 tablespoons raw honey
  • 1 teaspoon fresh thyme leaves
  • Pinch of sea salt and freshly ground black pepper

Method

  1. Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet.
  2. Brush both sides of the baguette slices lightly with olive oil and season with a pinch of salt and pepper. Bake for 5 minutes
  3. minutes, or until lightly golden and crisp. Remove from oven.
  4. Top each toasted crostini with a slice of Brie cheese and two to three thin slices of apple.
