Abstract Beet and Goat Cheese Canvas

This visually stunning crostini is a masterpiece of flavor, featuring a vibrant swirl of beet-infused goat cheese spread across a crisp baguette slice. The earthy sweetness of the beets, the tang of the cheese, and the crunch of pistachios create a complex, gallery-worthy appetizer.

Ingredients

  • 1 baguette, thinly sliced
  • 8 ounces fresh goat cheese, softened
  • 2 medium beets, roasted and thinly sliced or diced
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 tablespoon balsamic glaze
  • 1/4 cup fresh dill, chopped
  • Salt and freshly ground black pepper to taste
  • 1/4 cup toasted walnuts, roughly chopped (optional, for texture)

Prep Steps

  1. 1Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet, drizzle lightly with olive oil, and toast for 5-7 minutes minutes until golden and crisp. Set aside to cool.
  2. 2In a small bowl, gently mash the softened goat cheese with a fork. Season with a pinch of salt and pepper.
  3. 3Arrange the toasted crostini on a serving platter. Spread a generous layer of the seasoned goat cheese on each slice.
  4. 4Artfully arrange the roasted beet slices or diced beets on top of the goat cheese, creating an "abstract canvas" effect.
  5. 5Drizzle the crostini with balsamic glaze and a touch more olive oil.
  6. 6Garnish generously with fresh chopped dill and, if desired, a sprinkle of toasted walnuts for added crunch.
  7. 7Serve immediately and enjoy this gourmet creation.

Chef's Tip & Pairing

For an extra artistic touch, use a small piping bag with a fine tip to create thin, contrasting lines of the plain and beet-infused cheese before adding the toppings. A crisp, dry Sauvignon Blanc with its bright acidity and herbal notes will beautifully complement the earthy beets and tangy goat cheese.

I tried this one last week and loved it. Instead of putting onto bagette slices, I cut a center slice from a larger loaf and turned into an open face toast.
